Gathered by Aboriginal people for thousands of years before the Europeans arrived, Sydney oysters became a farmed product in the 1870s and remain a popular seafood.

Sydney's famous native rock oyster that are endemic to the east coast of Australia. They inhabit sheltered estuaries and bays, and have a smooth, thick shell.

Drake, Bob

Last remaining oyster farmer on the Georges River at Oatley. He is the fourth generation of his family in the industry which once thrived along the Georges River.

Saville-Kent, William

Fisheries scientist and author whose success was in no way limited by the notoriety of his sister's conviction for murder. He was a pioneer of scientific management of Australian fisheries whose work preceded the establishment of aquaculture in pearling, oysters and salmon.
