Canterbury Sugarworks

As the earliest surviving element of the Australian sugar industry, the Sugarworks has endured a variety of industrial uses to become an intrinsic part of Canterbury's heritage.

Sydney Flour Mills before 1850

Wheat was a staple European food and the British brought it to Australia in 1788 expecting it be the basis of their diet. Before it could be consumed, however, the grain needed to be ground into flour, so flour milling became an immediate and necessary secondary industry in the colony.

Sydney's first ice

Natural ice, imported from the lakes of the north-eastern United States, cooled the drinks of Sydneysiders for the first time in 1839. During the early 1850s, the trade provided relief during Sydney summers, as well as a spur to local engineers to improve ice manufacturing.

Mr Joseph Bradshaw was born in 1905 and interviewed in 1986 for the 'Looking Back at Liverpool: An Oral History of the Liverpool Region 1900 to 1960' project. He remembers here the work of a child on general mixed farms in the area.

William H Bennett

Sentenced to seven years transportation for theft, William H Bennett progressed from being a convict in a 'town gang' at Parramatta to being a highly respectable baker and landholder. Like other upwardly mobile emancipists, William Bennett negotiated the degradations of the convict system while keeping sight of the opportunities the new colony offered.

Windmills of Sydney

In the late eighteenth century, and well into the nineteenth century, the tallest structures around Sydney Cove were windmills. They left few physical remains, yet their presence left a lasting legacy in early colonial landscape art and the minds and hearts of many contemporaries.

Working the Tides

Two watermills existed on the Georges River in the 1820s. In 2013 a research team sought to discover how the maritime landscape of the Georges River and its tributaries sustained the transport of wheat, flour and manpower between the two mills in order to better understand the trials and tribulations of the early colonial settlers and their reliance on the waterways and landscapes of the Georges River.

Henninges Bakery

Bakery constructed by Henry Henninges in 1893 and operated by him until 1912. The kneading, ploughing and steaming was done upstairs in the main working area and then sent through a chute downstairs to be baked in the 2 ovens. It is said that up to 5000 loaves were baked daily during this time. The lane behind the factory still bears Henninges name.

Arndell's windmill

Stone mill built with convict labour for Thomas Arndell in about 1804 on his property at Cattai on the Hawkesbury River. The surviving parts of the mill and associated granary buildings are probably the oldest industrial structures in Australia. The mill is identified in McGarvie's 1829 list of place names used by the local Aboriginal people as 'Daili' which has two possible meanings: ‘eat/hungry for dry stuff’ and ‘that! that one!’.

Undershot watermill, so called because of where the water hit the wheel, that was constructed by John Lucas in 1822 just above the head of navigation on Williams Creek on the Georges River. It was named after Governor Brisbane.

Third government windmill which stood in front of Fort Phillip which was built for Governor King by Nathaniel Lucas. It was described as an octagonal smock mill with propellers rotating on a post to gain the best advantage from prevailing winds.

Flour mill constructed in 1828 as a windmill and converted to a steam driven mill by the 1830s. It operated until rust destroyed local wheat crops in 1863 and was demolished in the 1880s.

Marsden's mill

Watermill built around 1810 on Darling Mills and Toongabbie Creeks by Samuel Marsden near the site of the present Cumberland hospital weir. It remained in use until about 1838. An earlier millrace on the same property was associated with the earlier Government Water Mill.

Miss Marjorie Tebb recalls coupons used after WWII in her family's butchering business, interviewed 1986

Miss Marjorie Tebb was born in 1920 and interviewed in 1986 for the 'Looking Back at Liverpool: An Oral History of the Liverpool Region 1900 to 1960.' Here she is talking about the complex arrangements for coupons after World War II that regulated the wholesale and retail trade in meat for CR Tebb and Sons, her family's butchering business.

MARJORIE: We went to the abattoirs every morning for a while and then we started to only go three times a week: Monday, Wednesdays and Fridays. In the meat hall we had a rubber stamp and if you said 'Right, I want that, how much is that?' they'd tell you so much a pound, or a kilo, as it is now, and then you'd put that rubber stamp on. And then when they delivered it you knew that it was what you'd got at the abattoirs because it had your stamp. At the time there was coupons [for] meat, and you had to have coupons to buy it. Many a coupon I counted; each beast was so many coupons or each lamb or mutton so many coupons per animal, pigs were so many coupons. And when you sold it you had to cut the coupons out of their [customers] books; and those coupons had to be counted and put in an envelope and sealed. You had five hundred in each envelope, an ordinary manilla envelope. You'd put them in and you'd put your stamp on the back of it - we've got a 'CR Tebb and Sons' stamp, you'd seal it and put the CR Tebb stamp on it and write 'five hundred coupons' on it. And you had to send that in to the Metropolitan Meat and Industry Board. They'd receive the coupons form you. That would give you the authority to buy the meat at the abattoirs.

Mr George Bates was born in 1912 and was interviewed in 1986 for the 'Looking Back at Liverpool: An Oral History of the Liverpool Region 1900-1960' oral history project. He remembers finding work at Ashcroft's Butcher's in Liverpool during the Great Depression.

GEORGE: Depression came and I decided to hit the track and I hit the track, in other words the swag, on account of the Depression coming on very hard, and I landed in Liverpool right at the railway station with my swag and everything and I camped there for quite a while under the trees there. Then I used to go down to the Old Men's Home, go down and have a meal and one thing and another and then, whilst I looked around, and I got the fortune of getting a job at Ashcroft's Butchers in those early days and just sweeping and doing the papers and then giving a hand with the sausages and I eventually got the great distinction of working there for twenty years. So I've seen Liverpool grow like one thing. In those early days Ashcroft's was a tremendous big butchery there, and they had approximately, of a morning, about twenty butchers minding their big butchery in Liverpool, and they'd supply all the hotels and that in Sydney and one thing or another, institutions and that. And they'd start at four o' clock in the morning the butchers would.

Mr Joseph Bradshaw was born in 1905 and interviewed in 1986 for the 'Looking Back at Liverpool: An Oral History of the Liverpool Region 1900-1960 ' project. He remembers here the work of a child on general mixed farms in the area.

JOSEPH: There was myself and Chris, we ran the dairy. I was only a kid at the time and there were two families. One was the Allcock family, they had a dairy out farther than us. In combination of the two families we ran a milk run in Liverpool, you know, with the horse and cart. And I used to have to go when I became eight or ten - Chris my sister was about eight years older than me - and between us we delivered milk in the morning and I think at that time we had around thirty cows, which was a lot of stock.

INTERVIEWER: So what time would you have to get up to milk the cows?

JOSEPH: 5 o'clock!

INTERVIEWER: Milk them and then deliver the milk?

JOSEPH: Yes, deliver the milk, then go home and go to school.

INTERVIEWER: And what about when you came home?

JOSEPH: Same, in the afternoon, but most of the afternoon milk was fed to the pigs - we had pigs as well.

In 1917, it was Good Friday. I'd been away, I was twelve years old at that time. We used to do a lot of rabbiting in those days, it was real bush country, and I come home and my dad had a heart attack and died. From then on I was the man of the house. We had cattle to look after, horses, and we had a lot of poultry as well; a few pigs. It was a general mixed farm, which was the general thing in those days because that was people's way of life, living, other than in the city, and I might add at this stage Liverpool only had a population in these days of something like twelve thousand.
